چکیده

Polyglycerol monolaurates are generally recognized as safe food additives and commonly used emulsifiers. In this study, the antimicrobial effect of four polyglycerol on two Gram-positive bacteria (Staphylococcus aureus Bacillus subtilis) Gram-negative (Escherichia. coli Pseudomonas aeruginosa) were investigated. The minimum inhibitory concentration (MIC) diglycerol monolaurate (PG2ML), triglycerol (PG3ML), hexaglycerol (PG6ML), decaglycerol (PG10ML) against S. was 0.16, 0.32, 0.63, 1.25 mg/mL, respectively. MIC PG2ML, PG3ML, PG6ML, PG10ML B. subtilis 1.25, 3.75 No apparent these E.
